Gyukatsu is a Kyoto-style Japanese speciality made with premium beef in a light, crisp coating. It is served rare, then finished by each guest on a personal hot stone to their preferred doneness.

Place a few slices at a time on the hot stone and cook them to your preferred doneness. Enjoy them with the accompanying condiments, which may include wasabi, Kyoto curry, dashi soy sauce and sansho pepper salt.
